Again, you;re making a leap here to worse-case scenario here. But let’s follow out this string a little bit.
Magneto not being Wanda and Pietro’s father doesn’t do anything to their Romani heritage. They’d still be the adoptive children of Django Maximoff, and would still identify as Romani.
As for their Jewish background, that seems to me to be a zero-sum game. I defy you to find a single story published since the reveal of Magneto as their father in which the concept that they were Jewish played any sort of a role. Certainly, neither character has ever self-identified as having any connection to being Jewish in my memory.
